Montalto Pennon Hill Pinot Noir is an approachable Mornington Peninsula Pinot Noir. Warm days and cool nights produce fruit with bright varietal character.
The grapes are destemmed to open fermenters and cold soaked before the onset of wild yeast fermentation. On average, the parcels spend a total of 2-3 weeks on skins.
Post ferment, the wine is pressed and transferred to new and seasoned French oak. Here it undergoes natural malolactic fermentation and matures for around nine months.
Bright red, Montalto Pennon Hill Pinot Noir is medium bodied with supple red fruit flavours and spicy complexity. Cellaring potential is seven years.
